Antonio Quari is the Cellar Master at Domaine Prieuré Roch, where under the close guidance of Henri-Frédéric Roch and Yannick Champ, he became a strong proponent of vineyard health and minimalist intervention.
Since 2017, he has made a single cuvée under his own name: a pinot noir from the Les Briquottes vineyard in Ladoix.
The plot was planted in 1976 and has been organically farmed for more than ten years by the only organic grower in Ladoix. In the cellar, Antonio crafts the wine with a similar philosophy to that used at DPR: 100% whole bunch fermentation, pigeage done by foot and remontage by gravity only. The wines are aged for ten months in old barrels before being bottled unfined and unfiltered.
